Located in the hindquarter, the salmon cut is a tender, underrated roasting joint with a smooth texture and rich, rounded flavour. Naturally lean, it roasts beautifully and retains moisture well, making it ideal for carving into neat, even slices. A refined alternative to the traditional rump roast.

COOKING INSTRUCTIONS

Roast (From Ambient)

  1. Remove from packaging 20 minutes before cooking. Preheat oven to 180°C.

  2. Lightly oil and season.

  3. Roast in the centre of the oven.

Timings:
Medium: 25 minutes per 500g

Rest for 10–15 minutes before serving.
